Arroz Doce : the cinnamon-kissed rice pudding that warms Portugal

This dessert may look simple and it is… but it’s exactly that simplicity that makes it so special. Arroz Doce, literally “sweet rice,” is a true institution of Portuguese cuisine : rice gently cooked in milk, infused with lemon zest and cinnamon, served during big celebrations or on a quiet winter Sunday when you just need a bit of comfort.

A bit of history… without putting you to sleep

Rice arrived in Portugal through Arab traditions and truly became popular in the 16th century as a people’s dessert. In the Portuguese version, it gets that unmistakable touch : egg yolks (often), lemon or orange zest, and of course that classic dusting of cinnamon on top. In short, it’s a dessert that blends sweetness + memory + togetherness, the perfect trio !

The recipe (cosy version “I want to make it tonight”)

Ingredients for about 6-8 servings :

  • 200 g medium-grain (carolino) rice
  • 1 L whole milk
  • 200–250 g sugar (to taste)
  • 4 egg yolks
  • 1 piece of lemon zest (or orange)
  • 1 cinnamon stick
  • 1 pinch of salt
  • Ground cinnamon for decoration

Preparation :

  1. In a saucepan, pour the milk, lemon zest, and cinnamon stick. Bring slowly to a boil, then lower the heat.
  2. In another pot, cook the rice in a little water (with the pinch of salt) until the water is almost absorbed.
  3. When the milk starts to simmer, gradually add it to the rice, stirring often. Let it cook on low heat until the rice is tender and creamy.
  4. Stir in the sugar and beaten yolks quickly so they mix in smoothly without curdling. Remove the zest and cinnamon stick.
  5. Pour the mixture into a dish or small bowls, let it cool slightly, and refrigerate if you prefer it chilled. Before serving, dust generously with ground cinnamon.

Chef’s tips and grandma’s secrets !

  • Always use carolino rice : it absorbs better and gives that perfect creamy texture.
  • Don’t skip the egg-yolk step : it gives the beautiful golden color and the signature Portuguese silkiness.
  • For a stronger aroma, let the zest and cinnamon infuse in the milk for a few minutes before mixing.
  • “Light” version (yes, it’s possible) : replace part of the whole milk with semi-skimmed or use brown sugar but the flavor will change slightly.
  • Serve warm for ultimate comfort, or chilled for a summer dessert, both are equally delightful.
